COW SHARES ARE $5.35 per pound based on the hanging weight of the animal PLUS processing fees (USDA processing under inspection and USDA cut&wrap under inspection, currently about $1.05 per pound*

*NOTES on Cow Shares. - Our price in column 2 is per pound on the hanging weight.
Hanging weight is carcass weighs after it is skinned, cleaned and gutted(as it hangs in the cooler), but before all aging and butchering into individual cuts.
The Meat Yield, or take home portion, is the weight after all butchering into individual cuts and is roughly two-thirds of hanging weight. Process fee is for USDA processing and USDA cut&wrap under inspection.
Butcher will do a standard cut, unless custom cuts are requested. Some items incur additional fee to cover extra processing, ingredients and packaging.
THIS IS JUST AN EXAMPLE BASED ON A LIVE WEIGHT ANIMAL OF 1200 POUNDS. Total cost will vary based on each animal, but we will try our best to stay within our customers desired budget

chuck roasts, rib eye/rib steak, brisket, short ribs, skirt steaks, sirloin, london broil, sirloin steaks, porterhouse / T-bone steaks, ground beef (in 1 lb packages only). Some items may be extra for processing and packaging such as - beef patties, beef patties with ingredients(cheese/bacon/jalepeno, etc) corned beef, nitrate free, pastrami...) If you are interested in different cuts, such as NY strip, tenderloins, etc, we will customize your order and delete some of the other cuts and may add more to ground beef, some request may incur additional charge*
